Ingredients

  • 2 cups cucumber, diced

  • 1 cup imitation crab meat, shredded (or real crab if preferred)

  • 1 cup cooked sushi rice, cooled

  • 1/2 avocado, diced

  • 1/4 cup mayonnaise

  • 1 tbsp rice vinegar

  • 1 tsp soy sauce

  • 1 tsp sesame oil

  • 1 tsp sriracha (optional, for spice)

  • 1 tbsp sesame seeds

  • 1 sheet nori (seaweed), cut into thin strips

  • Salt, to taste


Instructions

  • In a large bowl, combine cucumber, crab meat, avocado, and sushi rice.

  • In a small bowl, whisk together mayonnaise, rice vinegar, soy sauce, sesame oil, and sriracha (if using).

  • Pour dressing over the salad and toss gently to combine.

  • Sprinkle with sesame seeds and nori strips.

  • Chill for 15–20 minutes before serving for the best flavor.
