Cheeseburger Meatloaf Recipe: A Juicy Twist on a Classic Comfort Food

For the Meatloaf:

  • lbs ground beef (80/20)

  • 1 cup shredded cheddar cheese (or American cheese, diced)

  • ½ cup breadcrumbs (plain or panko)

  • 2 large eggs

  • ½ cup milk

  • ¼ cup ketchup

  • 2 tbsp yellow mustard

  • 1 tbsp Worcestershire sauce

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt and pepper, to taste

  • ½ cup finely diced onion

  • ¼ cup chopped dill pickles (optional for burger flavor!)

For the Glaze:

  • ¼ cup ketchup

  • 1 tbsp yellow mustard

  • 1 tsp brown sugar (optional, for a sweet kick)


Instructions

  • Preheat Oven:

    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil, or grease a loaf pan.

  • Mix the Meatloaf:

    • In a large bowl, combine ground beef, cheese, breadcrumbs, eggs, milk, ketchup, mustard, Worcestershire, garlic powder, onion powder, diced onion, pickles (if using), salt, and pepper.

    • Mix just until everything is combined — don’t overmix!

  • Shape and Place:

    • Shape the meat mixture into a loaf shape (either in a loaf pan or freeform on a baking sheet).

  • Top with Glaze:

    • In a small bowl, stir together ketchup, mustard, and brown sugar. Spread evenly over the top of the loaf.

  • Bake:

    • Bake for 55–65 minutes, or until internal temperature reaches 160°F (71°C). If using a loaf pan, it may take a little longer.

 

  • Rest and Serve:

    • Let the meatloaf rest for 10 minutes before slicing. Serve with mashed potatoes, green beans, or a crisp salad.
