Ingredients

2 cups cooked chicken breast, shredded or cubed

2 cups coleslaw mix (shredded cabbage & carrots)

1 cup romaine lettuce, chopped

1/2 cup roasted cashews

1/2 cup red bell pepper, thinly sliced

2 green onions, chopped

1/4 cup fresh cilantro, chopped (optional)

1/3 cup crispy chow mein noodles (optional for extra crunch)
Dressing:

1/4 cup rice vinegar

2 tbsp soy sauce

2 tbsp sesame oil
-
1 tbsp honey
-
1 tsp fresh ginger, grated

1 clove garlic, minced

Salt & pepper, to taste
Instructions

In a large salad bowl, combine chicken, coleslaw mix, lettuce, bell pepper, green onions, cilantro, and cashews.

In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, ginger, garlic, salt, and pepper until well combined.

Pour dressing over salad and toss until evenly coated.

Sprinkle chow mein noodles on top if using, just before serving for maximum crunch.
