Chicken Cashew Crunch Salad: A Fresh, Flavorful, and Crunchy Delight

Ingredients

  • 2 cups cooked chicken breast, shredded or cubed

  • 2 cups coleslaw mix (shredded cabbage & carrots)

  • 1 cup romaine lettuce, chopped

  • 1/2 cup roasted cashews

  • 1/2 cup red bell pepper, thinly sliced

  • 2 green onions, chopped

  • 1/4 cup fresh cilantro, chopped (optional)

  • 1/3 cup crispy chow mein noodles (optional for extra crunch)

Dressing:

  • 1/4 cup rice vinegar

  • 2 tbsp soy sauce

  • 2 tbsp sesame oil

  • 1 tbsp honey

  • 1 tsp fresh ginger, grated

  • 1 clove garlic, minced

  • Salt & pepper, to taste


Instructions

  • In a large salad bowl, combine chicken, coleslaw mix, lettuce, bell pepper, green onions, cilantro, and cashews.

  • In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, ginger, garlic, salt, and pepper until well combined.

  • Pour dressing over salad and toss until evenly coated.

  • Sprinkle chow mein noodles on top if using, just before serving for maximum crunch.

 

  • Serve immediately and enjoy a fresh, crunchy, and flavorful bite!
