Chicken Cashew Crunch Salad – The Perfect Fusion of Flavor, Freshness, and Crunch

Ingredients

  • 3 cups cooked shredded chicken

  • 4 cups mixed greens (or chopped romaine)

  • 1 cup red cabbage, thinly sliced

  • 1 cup shredded carrots

  • 1 red bell pepper, sliced

  • 1/2 cup roasted cashews

  • 2 green onions, chopped

  • 2 tbsp sesame seeds (optional)

Dressing:

  • 1/4 cup rice vinegar

  • 3 tbsp soy sauce

  • 2 tbsp honey

  • 2 tbsp sesame oil

  • 1 tbsp olive oil

  • 1 tsp grated ginger

  • 1 clove garlic, minced


Instructions

  • In a large bowl, combine chicken, greens, cabbage, carrots, bell pepper, cashews, green onions, and sesame seeds.

  • In a small bowl or jar, whisk together rice vinegar, soy sauce, honey, sesame oil, olive oil, ginger, and garlic.

  • Pour dressing over salad just before serving.

  • Toss gently to combine.

 

  • Serve fresh and enjoy that crunchy, nutty flavor!
