3 cups cooked shredded chicken

4 cups mixed greens (or chopped romaine)

1 cup red cabbage, thinly sliced

1 cup shredded carrots

1 red bell pepper, sliced

1/2 cup roasted cashews

2 green onions, chopped

2 tbsp sesame seeds (optional)
Dressing:

1/4 cup rice vinegar

3 tbsp soy sauce

2 tbsp honey

2 tbsp sesame oil

1 tbsp olive oil

1 tsp grated ginger

1 clove garlic, minced
Instructions

In a large bowl, combine chicken, greens, cabbage, carrots, bell pepper, cashews, green onions, and sesame seeds.

In a small bowl or jar, whisk together rice vinegar, soy sauce, honey, sesame oil, olive oil, ginger, and garlic.

Pour dressing over salad just before serving.
