Ingredients

2 large chicken breasts, sliced into strips

2 tbsp Cajun seasoning (divided)

2 tbsp olive oil (or butter)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

8 oz penne pasta (or fettuccine)

Salt & pepper, to taste

Fresh parsley, chopped (for garnish)
Instructions

Cook pasta according to package directions; drain and set aside.

Season chicken with 1 tbsp Cajun seasoning. In a large skillet, heat olive oil and cook chicken until golden brown and cooked through. Remove and set aside.

In the same skillet, add bell peppers and garlic; sautΓ© until tender.

Pour in heavy cream, chicken broth, Parmesan, and remaining Cajun seasoning. Simmer until sauce thickens.

Add cooked pasta and chicken to the skillet, tossing until everything is well coated.

Season with salt & pepper to taste.

Garnish with fresh parsley and serve hot!
