Creamy Cajun Chicken Pasta Recipe

Ingredients

  • 2 large chicken breasts, sliced into strips

  • 2 tbsp Cajun seasoning (divided)

  • 2 tbsp olive oil (or butter)

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • 1 cup chicken broth

  • 1/2 cup grated Parmesan cheese

  • 8 oz penne pasta (or fettuccine)

  • Salt & pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  • Cook pasta according to package directions; drain and set aside.

  • Season chicken with 1 tbsp Cajun seasoning. In a large skillet, heat olive oil and cook chicken until golden brown and cooked through. Remove and set aside.

  • In the same skillet, add bell peppers and garlic; sautΓ© until tender.

  • Pour in heavy cream, chicken broth, Parmesan, and remaining Cajun seasoning. Simmer until sauce thickens.

  • Add cooked pasta and chicken to the skillet, tossing until everything is well coated.

  • Season with salt & pepper to taste.

 

  • Garnish with fresh parsley and serve hot!
