8 oz rotini or penne pasta, cooked & drained

2 cups corn kernels (fresh, grilled, or frozen & thawed)

1/3 cup mayonnaise

1/3 cup sour cream

1/2 cup cotija cheese, crumbled (or feta)

2 tbsp fresh lime juice

1 tbsp lime zest
-
1/2 tsp chili powder
-
1/4 tsp smoked paprika

1/4 cup fresh cilantro, chopped

1/4 cup red onion, finely diced

Salt & pepper, to taste
Instructions

Cook pasta according to package directions, then drain and let cool.

If using fresh or frozen corn, char it in a skillet or grill for extra flavor.

In a large mixing bowl, whisk together mayonnaise, sour cream, lime juice, lime zest, chili powder, smoked paprika, salt, and pepper.

Add pasta, corn, cotija cheese, cilantro, and red onion.

Toss until well coated.

Chill in the refrigerator for at least 30 minutes before serving for best flavor.
