Creamy Street Corn Pasta Salad – The Ultimate Summer Side Dish

Ingredients

  • 8 oz rotini or penne pasta, cooked & drained

  • 2 cups corn kernels (fresh, grilled, or frozen & thawed)

  • 1/3 cup mayonnaise

  • 1/3 cup sour cream

  • 1/2 cup cotija cheese, crumbled (or feta)

  • 2 tbsp fresh lime juice

  • 1 tbsp lime zest

  • 1/2 tsp chili powder

  • 1/4 tsp smoked paprika

  • 1/4 cup fresh cilantro, chopped

  • 1/4 cup red onion, finely diced

  • Salt & pepper, to taste


Instructions

  • Cook pasta according to package directions, then drain and let cool.

  • If using fresh or frozen corn, char it in a skillet or grill for extra flavor.

  • In a large mixing bowl, whisk together mayonnaise, sour cream, lime juice, lime zest, chili powder, smoked paprika, salt, and pepper.

  • Add pasta, corn, cotija cheese, cilantro, and red onion.

  • Toss until well coated.

  • Chill in the refrigerator for at least 30 minutes before serving for best flavor.
