4 boneless, skinless chicken breasts or thighs

1½ lbs baby potatoes, halved

¼ cup grated Parmesan cheese

3 tbsp olive oil or melted butter

1 tbsp minced garlic

1 tsp Italian seasoning

Salt & pepper to taste

Fresh parsley for garnish (optional)
Instructions

Place chicken and potatoes in the slow cooker.

In a bowl, mix olive oil, garlic, Parmesan, Italian seasoning, salt & pepper.

Pour mixture over the chicken and potatoes. Toss to coat evenly.

Cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and potatoes are soft.

Garnish with parsley and extra Parmesan before serving.
