Easy Cucumber Caprese Salad

Ingredients

  • 2 cups cucumber, sliced (English or Persian cucumbers work best)

  • 1 cup cherry tomatoes, halved

  • 8 oz fresh mozzarella balls (bocconcini), drained

  • 2 tbsp fresh basil, chopped

  • 2 tbsp extra virgin olive oil

  • 1 tbsp balsamic glaze

  • Salt & pepper, to taste


Instructions

  1. In a large bowl, combine cucumber slices, cherry tomatoes, mozzarella balls, and basil.

  2. Drizzle with olive oil and toss gently to coat.

  3. Season with salt and pepper to taste.

  4. Transfer to a serving dish and drizzle with balsamic glaze.

  5. Serve immediately as a refreshing side dish.
