2 cups cucumber, sliced (English or Persian cucumbers work best)

1 cup cherry tomatoes, halved

8 oz fresh mozzarella balls (bocconcini), drained

2 tbsp fresh basil, chopped

2 tbsp extra virgin olive oil

1 tbsp balsamic glaze

Salt & pepper, to taste
Instructions

In a large bowl, combine cucumber slices, cherry tomatoes, mozzarella balls, and basil.

Drizzle with olive oil and toss gently to coat.

Season with salt and pepper to taste.

Transfer to a serving dish and drizzle with balsamic glaze.
