Easy Taco Rice Bowl

Ingredients

  • 1 lb ground beef or ground turkey

  • 1 packet taco seasoning

  • 2/3 cup water

  • 2 cups cooked white or brown rice

  • 1 cup canned black beans, drained & rinsed

  • 1 cup corn (fresh, canned, or frozen)

  • 1 cup shredded cheddar or Mexican blend cheese

  • 1 cup salsa or pico de gallo

  • 1 avocado, diced

  • 1/2 cup sour cream or Greek yogurt

  • Fresh cilantro, for garnish (optional)

  • Lime wedges, for serving (optional)


Instructions

  • In a skillet over medium heat, brown ground beef until fully cooked. Drain grease.

  • Stir in taco seasoning and water. Simmer for 5 minutes until thickened.

  • Warm black beans and corn in the microwave or on the stovetop.

  • Assemble bowls: start with a bed of rice, then layer taco meat, beans, corn, cheese, salsa, avocado, and sour cream.

  • Garnish with cilantro and a squeeze of lime if desired.

 

  • Serve immediately and dig into this flavor-packed bowl!
