Garlic Parmesan Chicken & Potatoes: The Perfect Weeknight Dinner Solution

Ingredients

  • 1 lb boneless chicken thighs or breasts, cut into chunks

  • 3 cups baby potatoes, halved

  • 3 tbsp olive oil

  • 4 garlic cloves, minced

  • 1/2 cup grated Parmesan cheese

  • 1 tsp paprika

  • 1 tsp Italian seasoning

  • Salt & pepper to taste

  • Fresh parsley (for garnish)


Instructions

  • Preheat oven to 400°F (200°C).

  • In a large bowl, toss chicken and potatoes with olive oil, garlic, Parmesan, paprika, Italian seasoning, salt, and pepper.

  • Spread evenly on a greased sheet pan.

  • Bake for 30–35 minutes, flipping halfway, until chicken is cooked and potatoes are tender.

 

  • Garnish with fresh parsley and serve hot!
