1 lb boneless chicken thighs or breasts, cut into chunks

3 cups baby potatoes, halved

3 tbsp olive oil

4 garlic cloves, minced

1/2 cup grated Parmesan cheese

1 tsp paprika

1 tsp Italian seasoning

Salt & pepper to taste

Fresh parsley (for garnish)
Instructions

Preheat oven to 400°F (200°C).

In a large bowl, toss chicken and potatoes with olive oil, garlic, Parmesan, paprika, Italian seasoning, salt, and pepper.

Spread evenly on a greased sheet pan.

Bake for 30–35 minutes, flipping halfway, until chicken is cooked and potatoes are tender.

Garnish with fresh parsley and serve hot!
