Ingredients

Scale
  • 1.5 lbs flank or skirt steak

  • 1 stalk lemongrass, finely chopped

  • 1 tbsp fresh ginger, grated

  • 2 cloves garlic, minced

  • 1 cup coconut milk (unsweetened)

  • 2 tbsp soy sauce

  • 1 tbsp brown sugar or honey

  • Juice of 1 lime

  • Salt & pepper to taste

Instructions

  1. Make the marinade: In a bowl, mix coconut milk, lemongrass, ginger, garlic, soy sauce, lime juice, and sugar.

  2. Place the steak in a shallow dish or zip-top bag. Pour marinade over and let it sit for at least 1 hour (or overnight for best flavor).

  3. Preheat grill to medium-high heat.

  4. Remove steak from marinade, pat dry, and season lightly with salt & pepper.

  5. Grill steak 4–5 minutes per side (for medium-rare), depending on thickness.

  6. Rest for 5 minutes, then slice thinly against the grain.
