2 tbsp olive oil

3 garlic cloves, minced

1 small onion, diced

1 can (15 oz) white beans (like cannellini or Great Northern), drained & rinsed

4 cups fresh greens (spinach, kale, or chard)

½ tsp dried oregano

¼ tsp red pepper flakes (optional)

Juice of ½ lemon

Salt & pepper to taste
Instructions

Heat olive oil in a skillet over medium heat.

Sauté onion and garlic until soft and fragrant (about 3–4 minutes).

Add beans, oregano, red pepper flakes, salt & pepper. Stir for 2 minutes.

Toss in greens and cook until wilted (about 3–5 minutes).

Finish with a squeeze of lemon juice.
