Ingredients

  • 2 tbsp olive oil

  • 3 garlic cloves, minced

  • 1 small onion, diced

  • 1 can (15 oz) white beans (like cannellini or Great Northern), drained & rinsed

  • 4 cups fresh greens (spinach, kale, or chard)

  • ½ tsp dried oregano

  • ¼ tsp red pepper flakes (optional)

  • Juice of ½ lemon

  • Salt & pepper to taste


Instructions

  1. Heat olive oil in a skillet over medium heat.

  2. Sauté onion and garlic until soft and fragrant (about 3–4 minutes).

  3. Add beans, oregano, red pepper flakes, salt & pepper. Stir for 2 minutes.

  4. Toss in greens and cook until wilted (about 3–5 minutes).

  5. Finish with a squeeze of lemon juice.
