Mini Lemon Cheesecakes Recipe: The Perfect Bite-Sized Citrus Dessert

  • 1 cup graham cracker crumbs

  • 2 tbsp melted butter

  • 8 oz cream cheese, softened

  • 1/4 cup sugar

  • 1 egg

  • 2 tbsp lemon juice

  • 1 tsp lemon zest

  • Whipped cream & lemon slices (optional, for topping)


Instructions

  1. Preheat oven to 325°F (160°C). Line a muffin tin with cupcake liners.

  2. Mix graham crumbs with butter. Press 1 tbsp into each liner.

  3. In a bowl, beat cream cheese, sugar, egg, lemon juice, and zest until smooth.

  4. Pour over crusts. Bake for 15–18 minutes or until set.

  5. Cool, then refrigerate for at least 1 hour. Top with whipped cream if desired.
