Description

  • 2 tbsp Olive Oil
  • 2 tbsp Cajun Seasoning
  • 1 tbsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Red Pepper Flakes (optional)
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 lb Baby Potatoes
  • 4 cloves Garlic
  • 1/2 cup Parmesan Cheese
  • 1/4 cup Fresh Parsley

Instructions

  1. Preheat your oven to 425°F (220°C). Prepare a baking sheet with parchment paper or oil.
  2. In a bowl, toss chicken with olive oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, black pepper, and red pepper flakes. Let marinate for 10 minutes.
  3. In another bowl, combine halved baby potatoes with olive oil, minced garlic, salt, and black pepper.
  4. Spread the marinated chicken and seasoned potatoes on the baking sheet in a single layer. Arrange chicken skin-side up.
  5. Roast for 25–30 minutes, flipping halfway through. Chicken should reach an internal temperature of 165°F (74°C) and potatoes should be tender and crispy.
  6. Remove from oven and immediately sprinkle Parmesan cheese over the hot chicken and potatoes.
  7. Garnish with fresh parsley and serve.
