- 1 tsp Black Pepper
- 1 lb Baby Potatoes
- 4 cloves Garlic
- 1/2 cup Parmesan Cheese
- 1/4 cup Fresh Parsley
Instructions
- Preheat your oven to 425°F (220°C). Prepare a baking sheet with parchment paper or oil.
- In a bowl, toss chicken with olive oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, black pepper, and red pepper flakes. Let marinate for 10 minutes.
- In another bowl, combine halved baby potatoes with olive oil, minced garlic, salt, and black pepper.
- Spread the marinated chicken and seasoned potatoes on the baking sheet in a single layer. Arrange chicken skin-side up.
- Roast for 25–30 minutes, flipping halfway through. Chicken should reach an internal temperature of 165°F (74°C) and potatoes should be tender and crispy.
- Remove from oven and immediately sprinkle Parmesan cheese over the hot chicken and potatoes.
- Garnish with fresh parsley and serve.
