  • 1 lb ground beef

  • 2 medium zucchinis, chopped

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 can (14.5 oz) diced tomatoes, drained

  • 1 tsp Italian seasoning

  • Salt and pepper, to taste

  • 1 tbsp olive oil

  • Optional: shredded cheese or fresh parsley for topping


Instructions

  1. Cook the beef: In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.

  2. Sauté veggies: Add chopped onion and garlic to the skillet. Cook for 2–3 minutes until softened.

  3. Add zucchini: Stir in chopped zucchini and cook for another 5–7 minutes until tender.

  4. Mix in tomatoes: Add the drained diced tomatoes and Italian seasoning. Season with salt and pepper.

  5. Simmer: Reduce heat and let everything simmer together for 5 minutes to blend the flavors.

  6. Serve hot: Optional—top with shredded cheese or parsley.
