1 lb ground beef

2 medium zucchinis, chopped

1 small onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, drained

1 tsp Italian seasoning

Salt and pepper, to taste

1 tbsp olive oil

Optional: shredded cheese or fresh parsley for topping
Instructions

Cook the beef: In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.

Sauté veggies: Add chopped onion and garlic to the skillet. Cook for 2–3 minutes until softened.

Add zucchini: Stir in chopped zucchini and cook for another 5–7 minutes until tender.

Mix in tomatoes: Add the drained diced tomatoes and Italian seasoning. Season with salt and pepper.

Simmer: Reduce heat and let everything simmer together for 5 minutes to blend the flavors.
