1 lb steak (sirloin or ribeye), cut into strips

2 cups baby potatoes, halved

1 cup broccoli florets

1 cup carrots, sliced

3 tbsp butter, melted

3 garlic cloves, minced

1 tsp Italian seasoning

Salt & pepper to taste

Fresh parsley (optional)
Instructions

Preheat oven to 425°F (220°C).

Prepare garlic butter: Mix melted butter with garlic, Italian seasoning, salt, and pepper.

Toss veggies in half the garlic butter and spread on a sheet pan. Roast for 15–20 minutes.

Add steak: Toss steak strips in remaining garlic butter. Add to pan and roast 8–10 more minutes until done.

Serve hot, topped with chopped parsley if desired.
