Ingredients

  • 1 red bell pepper, chopped

  • 1 zucchini, sliced

  • 1 cup broccoli florets

  • 1 red onion, sliced

  • 3 tablespoons olive oil

  • 34 cloves garlic, minced

  • Salt and pepper to taste


Instructions

  • Preheat oven to 425°F (220°C).

  • Toss vegetables with olive oil, garlic, salt, and pepper.

  • Spread in a single layer on a baking sheet.

  • Roast for 25–30 minutes, stirring halfway through, until tender and lightly browned.

 

  • Serve warm as a side dish.
