Smashburger Quesadillas Recipe

Ingredients

  • 1 lb ground beef (80/20 works best)

  • Salt & black pepper, to taste

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 4 large flour tortillas

  • 1½ cups shredded cheddar or American cheese

  • ½ cup diced onions (optional)

  • Pickles, chopped (optional)

  • 2 tbsp yellow mustard (optional)

  • 2 tbsp mayo or burger sauce

  • Cooking oil or butter, for frying


Instructions

  • Preheat & Prep:

    • Heat a large skillet or griddle over medium-high heat.

    • Divide ground beef into 4 equal portions (¼ lb each), loosely shaped into balls.

  • Smash the Burgers:

    • Add a small amount of oil to the skillet.

    • Place a beef ball on the hot skillet and smash it flat with a spatula or burger press.

    • Season with salt, pepper, garlic powder, and onion powder.

    • Cook 2–3 minutes until browned and crisped, then flip and cook for 1–2 more minutes.

    • Repeat with all burger patties, then set aside.

  • Assemble the Quesadillas:

    • On half of each tortilla, layer:

      • A handful of cheese

      • Smashed burger patty

      • Optional onions, pickles, mustard

      • More cheese on top (for max melt)

    • Fold the tortilla over to create a half-moon shape.

  • Grill the Quesadillas:

    • Wipe the skillet clean and lightly oil it or melt some butter.

    • Cook each quesadilla over medium heat until golden and crispy on both sides, about 2–3 minutes per side.

 

  • Serve:

    • Slice into wedges and serve with extra sauce, ketchup, or a spicy dipping sauce.
