Ingredients

1 lb ground beef (80/20 works best)

Salt & black pepper, to taste

1 tsp garlic powder

1 tsp onion powder

4 large flour tortillas

1½ cups shredded cheddar or American cheese

½ cup diced onions (optional)

Pickles, chopped (optional)
-
2 tbsp yellow mustard (optional)

2 tbsp mayo or burger sauce
-
Cooking oil or butter, for frying
Instructions

Preheat & Prep:

Heat a large skillet or griddle over medium-high heat.

Divide ground beef into 4 equal portions (¼ lb each), loosely shaped into balls.

Smash the Burgers:

Add a small amount of oil to the skillet.
-
Place a beef ball on the hot skillet and smash it flat with a spatula or burger press.

Season with salt, pepper, garlic powder, and onion powder.

Cook 2–3 minutes until browned and crisped, then flip and cook for 1–2 more minutes.

Repeat with all burger patties, then set aside.

Assemble the Quesadillas:

On half of each tortilla, layer:

A handful of cheese

Smashed burger patty
-
Optional onions, pickles, mustard

More cheese on top (for max melt)

Fold the tortilla over to create a half-moon shape.

Grill the Quesadillas:

Wipe the skillet clean and lightly oil it or melt some butter.

Cook each quesadilla over medium heat until golden and crispy on both sides, about 2–3 minutes per side.

Serve:

Slice into wedges and serve with extra sauce, ketchup, or a spicy dipping sauce.
