Ingredients

  • 6 cups mixed salad greens (spinach, arugula, or spring mix)

  • 2 cups fresh strawberries, hulled & sliced

  • 1/2 cup candied pecans or walnuts

  • 1/2 cup crumbled feta or goat cheese

  • 1/2 cup crunchy granola or toasted almonds

  • 1/4 cup red onion, thinly sliced

Champagne Vinaigrette:

  • 1/4 cup champagne vinegar

  • 1/3 cup olive oil

  • 2 tbsp honey or maple syrup

  • 1 tsp Dijon mustard

  • Salt & pepper, to taste


Instructions

  1. In a large salad bowl, combine greens, strawberries, candied nuts, cheese, granola (or almonds), and red onion.

  2. In a small jar or bowl, whisk together champagne vinegar, olive oil, honey, Dijon mustard, salt, and pepper until emulsified.

  3. Drizzle vinaigrette over the salad just before serving.

  4. Toss gently to coat, keeping the crunch intact.
