6 cups mixed salad greens (spinach, arugula, or spring mix)

2 cups fresh strawberries, hulled & sliced

1/2 cup candied pecans or walnuts

1/2 cup crumbled feta or goat cheese

1/2 cup crunchy granola or toasted almonds

1/4 cup red onion, thinly sliced
Champagne Vinaigrette:

1/4 cup champagne vinegar

1/3 cup olive oil
-
2 tbsp honey or maple syrup

1 tsp Dijon mustard

Salt & pepper, to taste
Instructions

In a large salad bowl, combine greens, strawberries, candied nuts, cheese, granola (or almonds), and red onion.

In a small jar or bowl, whisk together champagne vinegar, olive oil, honey, Dijon mustard, salt, and pepper until emulsified.

Drizzle vinaigrette over the salad just before serving.
