Ingredients

    • 3.5 oz (100g) glass noodles

    • 1/4 lb (115g) ground pork or chicken

    • 68 shrimp, peeled and deveined

    • 1/4 cup red onion, thinly sliced

    • 1 small carrot, julienned

    • 1/4 cup chopped cilantro

    • 1/4 cup chopped green onions

    • 1 small chili, sliced (optional)

    • 1 tbsp toasted peanuts (optional)


    Dressing:

     

    • 3 tbsp fish sauce

    • 2 tbsp lime juice

    • 1 tbsp sugar

    • 1 minced garlic clove


Instructions

  1. Soak noodles in warm water for 10 minutes, then boil for 1–2 minutes. Drain and set aside.

  2. Cook pork in a skillet until browned. Add shrimp and cook until pink.

  3. Mix dressing: Combine fish sauce, lime juice, sugar, and garlic.

  4. In a large bowl, toss noodles with meat, shrimp, veggies, herbs, and dressing.

  5. Top with peanuts and chilies. Serve room temperature or slightly chilled.
