  • 12 oz rotini pasta (or pasta of choice)

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, diced

  • 1/2 cup red bell pepper, diced

  • 1/2 cup black olives, sliced

  • 1/2 cup mozzarella balls (or cubed cheese)

  • 1/4 cup red onion, finely diced

  • 1/4 cup pepperoni slices or salami, chopped (optional)

  • 1 cup Zesty Italian dressing (bottled or homemade)

  • 1 tbsp fresh parsley, chopped

  • Salt & pepper, to taste


Instructions

  1. Cook pasta according to package instructions. Drain, rinse under cold water, and set aside.

  2. In a large bowl, combine pasta, tomatoes, cucumber, bell pepper, olives, mozzarella, red onion, and pepperoni if using.

  3. Pour Zesty Italian dressing over the mixture and toss until everything is well coated.

  4. Season with salt, pepper, and parsley.

  5. Refrigerate for at least 30 minutes before serving for the best flavor.
