- Heat sesame oil in a large skillet over medium-high heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Incorporate the mixed vegetables and cook for 3-4 minutes.
- Push the vegetable mixture to one side of the pan and pour the beaten egg into the other side.
- Add the cooked rice, soy sauce, and sriracha to the skillet, stirring well.
- Fold in the sliced green onions and remove from heat.
- Taste and adjust seasoning if necessary, then serve warm.
