Ingredients
  

  • 12 oz tri-color rotini pasta orange, green, purple if available
  • 1 cup black olives whole and sliced for 'eyeballs'
  • 1 cup cherry tomatoes some cut in half, some whole for 'eyeballs'
  • 1 cup mozzarella balls mini bocconcini, to pair with olives for eyes
  • 1 cup diced cheddar cheese orange color for Halloween theme
  • 1/2 cup diced bell peppers orange and green
  • 1/4 cup red onion finely diced
  • 1/2 cup Italian dressing store-bought or homemade
  • 2 tablespoons fresh parsley or basil chopped
  • Salt and pepper to taste

Method
 

  1. Cook pasta according to package directions until al dente. Drain, rinse under cold water, and set aside.
  2. In a large bowl, combine cooked pasta, olives, cherry tomatoes, mozzarella balls, cheddar cubes, bell peppers, and onion.
  3. Toss with Italian dressing until evenly coated.
  4. Season with salt and pepper, then sprinkle with parsley or basil.
  5. For spooky touches: place sliced olives on mozzarella balls to make 'eyeballs,' and scatter throughout the salad.
  6. Chill for at least 30 minutes before serving.
