Ingredients
  

  • 1 lb ground beef or ground turkey
  • 1/4 cup water
  • 6 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 1 cup canned black beans rinsed and drained
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup sliced black olives
  • 1/2 cup diced red onion
  • 1 cup tortilla chips lightly crushed
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup salsa or pico de gallo

Method
 

  1. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat if needed.
  2. Stir in taco seasoning and water. Simmer for 2–3 minutes until the mixture thickens. Remove from heat and let cool slightly.
  3. In a large salad bowl, add lettuce, tomatoes, beans, corn, cheese, olives, onion, and avocado.
  4. Top with the seasoned ground beef.
  5. Just before serving, add crushed tortilla chips, sour cream, and salsa. Toss lightly to combine or serve layered.
  6. Garnish with cilantro and lime wedges if desired.
