Ingredients
  

  • 1 medium butternut squash about 2-3 pounds
  • 3 tablespoons brown sugar
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg optional
  • Freshly cracked black pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the squash by peeling, seeding, and cubing it into 1-inch pieces.
  3. In a large mixing bowl, combine the cubed butternut squash, olive oil, brown sugar, salt, cinnamon, nutmeg (if using), and black pepper.
  4. Spread the squash mixture in a single layer on a baking sheet, ensuring they are not overcrowded.
  5. Roast in the preheated oven for 25-30 minutes, flipping halfway through.
  6. Check for doneness by piercing with a fork; they should be tender and slightly caramelized.
  7. Remove from the oven and let cool slightly before serving.
