Ingredients
  

  • 12 oz fettuccine
  • 2 boneless skinless chicken breasts (about 1 lb)
  • 4 tbsp olive oil
  • 6 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 tsp red pepper flakes
  • Salt and black pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Cook the fettuccine according to package instructions until al dente.
  2. Heat olive oil in a large skillet over medium heat, then add the chicken breast. Season it with salt and pepper.
  3. Cook the chicken for about 6-7 minutes on each side until fully cooked and no longer pink in the center. Remove from the skillet and let it rest.
  4. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  5. Pour in the heavy cream, stirring to combine, and bring to a gentle simmer.
  6. Stir in the grated Parmesan cheese and red pepper flakes until the cheese is melted and the sauce is smooth.
  7. Slice the cooked chicken into strips and return it to the skillet with the sauce, tossing to coat.
  8. Add the drained fettuccine to the skillet, tossing everything together until well combined.
  9. Adjust seasoning with salt and pepper, and garnish with fresh parsley before serving.
