Ingredients
  

  • 1 lb ground beef
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 can 15 oz diced tomatoes
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese Cheddar or Monterey Jack
  • Salt and pepper to taste
  • Optional toppings: sour cream avocado, cilantro

Method
 

  1. Brown the ground beef in a large pot over medium heat.
  2. Add the diced onion and minced garlic, sautéing until soft.
  3. Stir in the diced tomatoes, black beans, and corn.
  4. Sprinkle in the taco seasoning and stir to combine.
  5. Pour in the chicken broth and bring it to a simmer.
  6. Stir in the heavy cream and let it heat through.
  7. Season with salt and pepper to taste before serving.
  8. Ladle into bowls and top with shredded cheese and optional toppings.
