Creating a Flavorful Healthy Yogurt Cake

Ingredients
  

  • 1 cup plain Greek yogurt
  • 1/2 cup honey
  • 2 large eggs
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • Optional: zest of 1 lemon

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the Greek yogurt and honey.
  3. Add in the eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Stir in the vanilla extract and lemon zest if using.
  7. Pour the batter into a greased and floured cake pan.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let the cake cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  10. Slice and serve plain, or top with fresh fruit or a yogurt glaze.
