Ingredients
  

  • 6 large eggs
  • 1 cup cooked potatoes diced
  • 4 strips of bacon cooked and crumbled
  • 1 cup shredded cheese Cheddar or Gruyère
  • 1/2 cup milk
  • 1/4 cup onion diced
  • Salt and pepper to taste
  • 2 tablespoons fresh herbs like chives or parsley

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Cook the bacon in a skillet over medium heat until crispy, then remove and crumble.
  3. Sauté the diced onion in the bacon fat until softened, about 5 minutes.
  4. In a bowl, whisk together the eggs, milk, salt, and pepper.
  5. Fold in the cooked potatoes, crumbled bacon, and cheese.
  6. Pour the mixture back into the skillet and cook over low heat for about 5-7 minutes.
