Delicious Baked Seafood Casserole for Family Dinners

Ingredients
  

  • 1 pound mixed seafood shrimp, scallops, fish
  • 1 cup cooked rice
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup shredded cheese cheddar or Gruyère
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and sauté for an additional minute.
  3. Mix the seafood into the skillet with the onions and garlic. Cook for 3-4 minutes until just cooked through, then remove from heat.
  4. In a large mixing bowl, combine the cooked rice, heavy cream, half of the cheese, and salt and pepper. Mix well.
  5. Fold the sautéed seafood mixture into the rice mixture until well combined.
  6. Transfer the mixture into a greased baking dish, spreading it out evenly.
  7. Sprinkle the remaining cheese and breadcrumbs evenly on top.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  9. Let the casserole cool for a few minutes before serving.
