Ingredients
  

  • 8 small potatoes scrubbed and dried
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese such as cheddar or Monterey Jack
  • ¼ cup sour cream
  • 2 green onions finely chopped
  • Bacon bits for topping (optional)

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the potatoes by cutting them in half.
  3. Toss the potato halves with olive oil, garlic powder, paprika, salt, and pepper.
  4. Arrange the potato halves cut-side up on a baking sheet.
  5. Bake for 20-25 minutes or until fork-tender.
  6. Remove the potatoes from the oven and sprinkle with cheese.
  7. Return the potatoes to the oven for 5-7 minutes until the cheese is melted.
  8. Top with sour cream, green onions, and bacon bits if desired.
  9. Serve warm and enjoy.
