In another bowl, beat the softened butter and granulated sugar together until light and fluffy.
Add the egg and almond extract to the butter mixture and continue to beat until fully combined.
Gradually blend in the dry mixture into the wet mixture until just combined.
Fold in the chocolate chips, diced cherries, and chopped pistachios gently.
Scoop tablespoon-sized portions of the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Bake in the preheated oven for 10–12 minutes, or until the edges are golden brown.
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
