  • 1 cup unsalted butter melted
  • 1 1/2 cups brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups diced apples about 2 medium
  • 1 teaspoon cinnamon
  • 2 tablespoons maple syrup

Method

  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large mixing bowl, whisk together the melted butter and brown sugar until smooth.
  3. Add the eggs and vanilla extract, whisking until fully incorporated.
  4. In a separate bowl, sift together the flour, baking powder, salt, and cinnamon.
  5. Gradually fold the dry mixture into the wet mixture until just combined.
  6. Gently fold in the diced apples until evenly distributed.
  7. Pour the batter into the prepared baking pan and smooth the top.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the blondies to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Once the blondies are cool, prepare the maple glaze by whisking together the maple syrup and a tablespoon of water.
  11. Drizzle the glaze over the cooled blondies and let it set for a few minutes before slicing.
