  • 1 box 15.25 oz strawberry cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 3/4 cup chopped fresh strawberries or 1/2 cup freeze-dried strawberries
  • 1/2 cup white chocolate chips optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the strawberry cake mix, vegetable oil, and eggs.
  3. Gradually add in the all-purpose flour until just combined.
  4. Fold in the chopped strawberries and white chocolate chips if desired.
  5. Scoop tablespoon-sized amounts of dough onto a parchment-lined baking sheet.
  6. Bake for 10-12 minutes or until the edges are lightly golden.
  7. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
