Method
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine pumpkin puree, cinnamon, and powdered sugar until smooth.
- Add in the crushed graham crackers and stir until fully incorporated.
- Fold in the mini marshmallows and chocolate chips gently.
- Scoop the batter into lined muffin tins, filling each cup halfway.
- Bake for 15-20 minutes, or until a toothpick comes out clean.
- Allow to cool completely before decorating with coconut flakes and more chocolate chips.
