Ingredients
  

  • 1 cup coconut flour
  • 1/2 cup coconut oil melted
  • 1/4 cup honey or maple syrup
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: chocolate chips or nuts

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together coconut flour, baking soda, and salt.
  3. In another bowl, combine melted coconut oil, honey (or maple syrup), eggs, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Fold in chocolate chips or nuts if desired.
  6. Scoop dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 10-12 minutes or until edges are golden.
  8. Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
