Eyeball Pasta Salad — Smoky Heat in Every Bite

Eyeball Pasta Salad: Make Eyeball Pasta Salad with pantry staples, clear cues, and flexible swaps.

Ingredients
  

  • 12 oz rotini or bowtie pasta
  • 1 cup cherry tomatoes halved
  • 1 cup fresh mozzarella balls ciliegine or bocconcini
  • 1/4 cup sliced black olives
  • 1/2 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/2 cup Italian dressing store-bought or homemade
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning

Method
 

  1. Cook pasta according to package directions until al dente. Drain, toss with olive oil, and let cool.
  2. In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, and red onion.
  3. To make “eyeballs,” place a mozzarella ball in the salad and top with a black olive slice (press lightly so it sticks).
  4. Toss the salad with Italian dressing and Italian seasoning until well coated. Season with salt and black pepper to taste.
  5. Garnish with fresh basil if desired, then chill in the refrigerator for at least 30 minutes before serving.
  6. Serve cold and spooky for Halloween!
