Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley chopped
  • 1 tablespoon fresh thyme chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 1 cup marinara sauce

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the filling by mixing ricotta, Parmesan, parsley, thyme, garlic powder, salt, and pepper in a bowl.
  3. Butterfly each chicken breast for stuffing.
  4. Stuff each chicken breast with the ricotta mixture and secure with toothpicks.
  5. Heat olive oil in an oven-safe skillet over medium heat.
  6. Sear the stuffed chicken rolls for 3-4 minutes on each side until golden brown.
  7. Add marinara sauce to the skillet around the chicken rolls.
  8. Transfer the skillet to the preheated oven and bake for 25-30 minutes.
  9. Let the chicken rolls rest before slicing.
  10. Serve with additional marinara sauce if desired.
