Preheat the oven to 400°F (200°C).
Prepare a baking dish by drizzling it with olive oil.
In a small bowl, mix olive oil, lemon juice, lemon zest, minced garlic, dried oregano, smoked paprika, salt, and pepper.
Place the fish fillets in the prepared baking dish and pour the marinade over them.
Surround the fish with cherry tomatoes, sliced red onion, and kalamata olives.
Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes.
Remove the foil and bake for an additional 10-15 minutes until the fish is cooked through and flakes easily.
Garnish with fresh herbs if desired and serve warm.
