Method
- Preheat your oven to 350°F (175°C).
- In a medium saucepan, melt the butter with brown sugar over low heat.
- Remove from heat and mix in the vanilla extract.
- In a separate bowl, combine oats, flour, baking soda, salt, and coconut.
- Fold the dry ingredients into the wet mixture until combined.
- Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
- Bake for 10-12 minutes or until golden brown.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
