Ingredients
  

  • 2 lbs beef chuck cut into 1-inch cubes
  • 2 medium sweet potatoes peeled and cubed
  • 1 large onion diced
  • 3 carrots sliced
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil for browning

Method
 

  1. Heat olive oil in a skillet over medium-high heat and brown the beef chunks on all sides.
  2. Transfer the browned beef to the crockpot.
  3. In the same skillet, add the onions and garlic, sautéing until softened.
  4. Add the sautéed onions and garlic to the crockpot along with sweet potatoes, carrots, broth, thyme, paprika, salt, and pepper.
  5. Stir the mixture to combine all the ingredients thoroughly, settling the vegetables and meat evenly.
  6. Cover the crockpot and cook on low for 6-8 hours or on high for 4-6 hours.
