Ingredients
  

  • 2 medium beets peeled and cut into wedges
  • 2 large carrots peeled and sliced into rounds
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme or rosemary for garnish

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the beets and carrots by cutting them into uniform sizes.
  3. In a large bowl, combine the beets and carrots with olive oil, honey, salt, and pepper.
  4. Spread the vegetables on a baking sheet lined with parchment paper.
  5. Roast in the oven for about 25-30 minutes, stirring halfway through.
  6. Remove from the oven and let cool slightly before garnishing with herbs.
