Ingredients
  

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 egg
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together the ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic, Italian seasoning, egg, salt, and pepper.
  3. Form the mixture into meatballs, about 1 inch in size.
  4. In a skillet, heat the olive oil over medium heat and cook the meatballs until browned, about 5 minutes.
  5. Transfer the browned meatballs to a baking dish.
  6. In the same skillet, pour in the chicken broth and scrape up the browned bits.
  7. Add the heavy cream and stir until combined. Pour the sauce over the meatballs in the baking dish.
  8. Bake in the oven for 20-25 minutes, or until the meatballs are cooked through.
  9. Serve hot, garnished with extra parsley if desired.
