Ingredients
  

  • 2 cups unsweetened shredded coconut
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan.
  3. In a large mixing bowl, combine shredded coconut, sugar, and flour.
  4. Add coconut milk, eggs, vanilla, and salt into the dry mixture.
  5. Stir until just combined, being careful not to overmix.
  6. Fold in baking powder gently until it's fully incorporated.
  7. Pour the batter into the prepared cake pan.
  8. Bake for 25-30 minutes or until the top is golden and a toothpick inserted comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack.
  10. Serve as is or dust with powdered sugar for extra sweetness.
