Stuff each jalapeño half with the cheese mixture.
Flatten the chicken breasts and wrap them around the stuffed jalapeños, securing with toothpicks if necessary.
Spray your smoker rack with cooking spray
Place the wrapped chicken bombs in the smoker and cook for about 2 to 2.5 hours, or until the chicken reaches an internal temperature of 165°F (74°C).
Once cooked, remove from the smoker and let rest for 10 minutes before serving.
