Preheat the oven to 375°F (190°C).
Prepare the zucchinis by slicing them in half lengthwise and scooping out the insides.
In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
Add chopped zucchini flesh to the skillet and cook until softened.
Stir in cooked quinoa, cherry tomatoes, Kalamata olives, feta cheese, oregano, salt, and pepper.
Spoon the filling into the hollowed zucchini halves and place them on a baking sheet.
Bake in the preheated oven for 25-30 minutes or until the zucchinis are tender.
Remove from the oven and let cool slightly before serving.
