Ingredients
  

  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1/4 cup powdered sugar
  • 2 teaspoons pure vanilla extract
  • 1 large egg
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon peppermint extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup crushed candy canes optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Add the vanilla extract, peppermint extract, and egg to the creamed mixture, beating until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chocolate chips and crushed candy canes if using.
  7. Using a cookie scoop or tablespoon, drop dough onto a lined baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Once cooled, dust with additional powdered sugar for that snowy effect.
