Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 carrot sliced
  • 1 zucchini diced
  • 1 bell pepper chopped
  • 1 cup kale or spinach chopped
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 1 lemon

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 3-4 minutes.
  3. Stir in minced garlic and cook for another minute.
  4. Add sliced carrot and diced zucchini; cook for 5 minutes.
  5. Add chopped bell pepper and kale (or spinach), stirring to combine.
  6. Pour in vegetable broth, and add dried thyme, salt, and pepper.
  7. Bring the soup to a boil, then reduce heat to simmer for 15 minutes.
  8. Add lemon juice just before serving, adjusting seasoning as necessary.
