Ingredients
  

  • 1 lb ground beef
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 ½ cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup tortilla chips crushed

Method
 

  1. Brown the ground beef in a skillet over medium heat until fully cooked.
  2. In the crockpot, add the cooked ground beef along with black beans, corn, diced tomatoes, and taco seasoning.
  3. Stir to combine all ingredients well, ensuring even distribution of spices and flavors.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until heated through.
  5. Once cooked, stir in half of the cheddar cheese and the sour cream.
  6. Sprinkle the remaining cheddar cheese on top and cover until melted.
  7. Top with crushed tortilla chips just before serving for added crunch.
