Ingredients
  

  • 1 pound Italian sausage sweet or spicy
  • 2 bell peppers any color, sliced
  • 1 large onion sliced
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the ingredients: slice the bell peppers and onion, and mince the garlic.
  3. In a large bowl, combine the sliced peppers, onions, garlic, olive oil, oregano, salt, and pepper.
  4. Add the sausage to the bowl and mix until combined.
  5. Spread the mixture evenly on a sheet pan.
  6. Roast in the oven for 25-30 minutes, stirring halfway through.
  7. Check for doneness and remove from the oven.
  8. Allow to cool slightly before serving.
